Lemon & Herb Chicken

Ingredients:
- Extra Virgin Olive Oil
- Chicken Breasts
- Lemon
- Parsley
- Mint
- Basil
- S&P
- White Wine
Directions:
- Heat 2 Tbsp EVOO in oven proof skillet on high heat. Place chicken in skillet and sear (2 minutes/side)
- While the chicken cooks, put 4 tsp EVOO, along with lemon juice, zest and herbs into a blender or food processor and pulse until well mixed.
- Place skillet with chicken in 400 degree oven to roast for 8 minutes.
- Remove skillet and place chicken on a plate; season with S&P and pour wine into skillet (get the brown bits from the bottom of the pan mixed in).
- Add herb sauce to skillet and cook on the stove top for 1 minute (stir frequently). Pour sauce over chicken. Yum!
