Lemon & Herb Chicken | Healthy Recipe of the Day

Lemon & Herb Chicken


I love this recipe because it is simple, yet delicious.  This weekend we bought herbs for the first time to grow on our deck.  We have already used them every night since we got them!  This recipe incorporates awesome flavor from the fresh herbs and the lemon adds a sweet tang.  Serve with quinoa and a side of steamed broccoli for a perfect week night meal.

Ingredients:
  1. Extra Virgin Olive Oil
  2. Chicken Breasts
  3. Lemon
  4. Parsley
  5. Mint
  6. Basil
  7. S&P
  8. White Wine
Directions:
  1. Heat 2 Tbsp EVOO in oven proof skillet on high heat.  Place chicken in skillet and sear (2 minutes/side)
  2. While the chicken cooks, put 4 tsp EVOO, along with lemon juice, zest and herbs into a blender or food processor and pulse until well mixed.
  3. Place skillet with chicken in 400 degree oven to roast for 8 minutes.
  4. Remove skillet and place chicken on a plate; season with S&P and pour wine into skillet (get the brown bits from the bottom of the pan mixed in).
  5. Add herb sauce to skillet and cook on the stove top for 1 minute (stir frequently).  Pour sauce over chicken.  Yum!
